Hotter than a jalapeno, the serrano pepper starts out bright medium to dark green with a slightly pointed tip. It can ripen to red, brown, orange or yellow. Its size is one to two inches in length, and it offers a crisp fresh flavor along with high acidity. Store in the refrigerator for up to one week. The serrano adds heat to any dish. It does not have to be cooked-it can be added to sauteed fresh corn or guacamole. Remember to use gloves when working with serranos. And don’t forget to include them in your favorite salsa recipe.
