Sliced Baked Potatoes

Ingredients:
1 large potato
1 teaspoon coconut oil or olive oil
Salt and pepper to taste
Toppings of your choice like fresh herbs, cheese, bacon, ham, green onion etc.

Directions: 
1.  Slice potatoes widthwise about 3/4 of the way down. Be careful not to slice all the way through the bottom.
2.  Slather oil all over potato; add salt and pepper.
3.  Bake at 400 degrees for about 45 minutes.
4.  Take out of the oven and place cheese or any of the topping(s) of your choosing in between slices and bake for another 15 minutes to melt.
