This recipe was found in the latest Penzey’s Spices catalog. It was shared by John and Nancy Stewart. It goes together quickly and easily, and it’s delicious! (Note from Dee: I tried this out at home on my family, and they loved it. Then I made another one for my co-workers and it was gone in no time!)
Prep. time: 20 minutes
Baking time: 60 minutes *(Note from Dee: Mine didn’t need a full hour to bake–try checking it at 40-45 minutes. Remember to let it cool awhile before slicing, to let it “set up”.)
Servings: 8
Ingredients:
2 apples
3/4 Cup sugar
1/3 Cup flour
1 1/4 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 eggs, beaten with a fork
1 teaspoon pure vanilla extract
1 Cup pecans (we used halved; chopped would work)
Directions:
1. Preheat oven to 350 degrees F. Peel and slice the apples into a large bowl.
2. Add the rest of the ingredients and stir well.
3. Spoon into a pie plate with a flexible spatula to get every bit, and bake at 350 degrees F. for 1 hour*. It’s just that easy! Let cool at least partially before slicing.
