We strongly encourage you to cook your new potatoes immediately, rather than having them sit on the counter awhile. Since they have no skins, they are very tender and do not have the shelf life of potatoes you may be more used to.
Significant amounts of essential vitamins are contained in steamed new potatoes, especially when prepared with the skins intact. One serving of new potatoes provides almost 45 percent of the RDA for vitamin C, and 10 percent of the RDA for vitamin B6. A single serving of new potatoes also contains a high concentration of potassium, (620 milligrams), or 18 percent of the RDA.
