Ripe muskmelon is nearly round in size and the rind is rough textured and tan to greenish-tan in color. The outer skin of a muskmelon looks like a network of intertwining veins. The flesh is sweet , fragrant, and deep orange in color. Muskmelon is low in calories and an excellent source of vitamin A. It is rich in antioxidant flavonoids such as beta-carotene, lutein, zea-xanthin and cryptoxanthin. It also contains moderate levels of B-complex vitamins, vitamin C and manganese.
To prepare muskmelon, wash the outside of the fruit thoroughly before cutting. It can be sliced, cubed, or scooped into balls, depending on the size desired. Muskmelon can be served alone or added to a fruit salad. It is also delicious served with ice cream.
