Monument cabbage is in the Chinese cabbage family. It grows in a tall and cylindrical fashion (hence the name: monument). The cabbage heads average 4″ wide by 16-18″ tall. It can get up to 4 lbs. in weight. The outer leaves are green and the interior is white. The crisp textured leaves are excellent for soups, stir-fry and pickling. Monument cabbage is high in vitamin C, offers moderate levels of vitamin K, and is an excellent source of dietary fiber.
To preserve the fresh quality of cabbage, store in a plastic bag in the crisper drawer of the refrigerator. This will help maintain its moisture and retain the vitamin C content. If it’s necessary to store a partial head of cabbage, cover it tightly with plastic wrap, refrigerate, and use within a couple of days.
