We are delighted to share with you this recipe given to us by Jane Pahl. She says it’s delicious, and look how easy it is to prepare!
Prep time: 20 minutes
Cook time: 25-30 minutes
Servings: 4
Ingredients:
4-5 Tomatoes
2 cloves Garlic, minced (or garlic powder, to taste)
1 medium Onion, diced (white, red or green topped)
Fresh Thyme
1 Baguette, cut up (1/2 cup to 1 cup)
2 Tablespoons Extra Virgin Olive Oil (or any vegetable oil you have on hand)
Salt and Pepper to taste
Basil leaves, cut up
Shredded Cheese, optional
Directions:
1. Spray baking dish with non-stick cooking spray. Slice the tomatoes and line in pan.
2. In medium sized bowl, mix together garlic, onions, fresh thyme, cut up baguette, oil, salt and pepper. Lay over tomatoes.
3. Bake at 425 degrees Fahrenheit for 25-30 minutes.
4. Remove from oven and sprinkle with shredded cheese (optional) and chopped basil leaves.
