This recipe comes to us from Cassie, who lives in Australia and shares recipes on her blog, “Cook it Real Good”. She favors cheddar cheese in her recipe, but she says any of your favorites can be used, and lactose free cheese can be substituted if necessary. Precooked, crumbled bacon can be added for additional flavor. Diced ham could also be used. For variety and color, try adding grated carrots and/or finely chopped orange, yellow and red sweet mini peppers.

Ingredients:
4 zucchinis, grated and drained*
1 cup whole wheat Flour (white flour can be used, or gluten free flour can be substituted)
1 cup grated Cheese
1 Onion, finely diced
1/4 cup Olive Oil
1 teaspoon Baking Powder
5 eggs
salt & pepper, to taste
Directions:
1. Preheat oven to 350 degrees and line small baking pan (8 x 12 inches, or square 8 x 8 inches) with parchment paper.
2. Whisk eggs in a large mixing bowl. Add flour and baking powder and mix until smooth.
3. Add grated zucchini, onion, cheese, olive oil, eggs, salt and pepper, and mix together until well combined.
4.Pour mixture into pan and place in oven for 35-40 minutes or until fully cooked through and slightly browned on top.
5. Cut into 9 slices and serve on it’s own or with some hummus on top!
Notes:
PREPARING ZUCCHINI – Be sure to drain the grated zucchini in a colander before mixing in with the other ingredients, to remove excess moisture.
STORING – Store in an airtight container in the fridge for up to 5 days, or in the freezer for up to 3 months. To defrost, place in fridge overnight.
REHEAT – Reheat in microwave or oven, or eat cold (Cassie’s favorite).
