Harvest Highlights: Week 5 CSA News & Updates

Hi CSA Members, welcome to week 5!

Another harvest of cucumbers brings this favorite back to the shares this week.  Well, a favorite for most – they don’t like me much and frankly the feeling is mutual.  However, I have found that using grated cucumber in dips or sauces can add a nice flavor masked by the herbs and other ingredients.  Or try blending cucumber with spinach, banana, a handful of berries, a spoonful of peanut butter, and a splash of almond milk for a nutrient-packed drink.  Some say that placing freshly sliced cucumber on closed eyelids can reduce puffiness or dark circles and provide hydration to the surrounding tissues, great alternative to eating them!

We are also going to see another picking of summer squash in our shares this week.  Luckily, our CSA community is full of fantastic cooks, and we’re delighted to share a recipe that one CSA member recently enjoyed. It’s a perfect example of how summer squash can be transformed into a mouthwatering dish. The pepper harvest has started!  You will notice a pop of vibrant green in your share boxes this week as crisp and flavorful green bell peppers make their first appearance in the shares this season.  Green peppers are incredibly versatile, making them a perfect addition to your kitchen. Dice them up for a colorful salad, stuff them with your favorite fillings for a wholesome meal, or sauté them with other veggies for a scrumptious stir-fry.

Another new item this week, Banana peppers add a whole new level of flavor and crunch that cannot be matched.  They can be enjoyed raw, grilled, baked, or you can pickle them yourself!  Pickled banana peppers are fantastic on pizzas, sandwiches, or on salads.  Follow this link, Pickled Banana Peppers, for a quick and easy pickling recipe!
