We are sharing another one of Brenda’s favorite recipes. Her family raves about this one! Just to remind you-Brenda is one of our greenhouse ladies. Enjoy!
Ingredients
1 pound Italian sausage
1 pound ground beef or turkey
1 onion, chopped
4 cloves garlic, chopped fine
2 Tablespoons sugar
3/4 Tablespoon basil
1/2 teaspoon fennel seed
1 teaspoon Italian seasoning
1 Tablespoon salt
1/2 teaspoon pepper
1/8 cup parsley
2 1/2 pounds Roma, plum, or regular tomatoes (Brenda uses whatever she has on hand)
2 6-ounce cans tomato paste
16 ounces of tomato sauce
1/2 cup water (may not need if tomatoes are watery, depends on variety used)
Brenda also adds roasted peppers (optional)
Directions:
1. In large stock pot, saute sausage, ground beef or turkey, onion and garlic until well browned.
2. Add seasonings and mix well.
3. Add tomatoes with juice, sauce, paste, and water, if using.
4. Mash tomatoes with wooden spoon.
5. Bring to boil, reduce heat and simmer until thick, about 3 hours. Adjust seasonings/sugar after some good cooking time.
Cook’s note: This recipe is easily multiplied. Brenda makes large quantities and freezes the sauce, flat, in 1 quart bags.
