This cabbage slaw was found on the website Tablespoon.com. Since I have a huge chive plant in my garden, I added some finely chopped chives for additional taste and color. If you have green onions on hand, try those as well.

Ingredients:
1 head Napa cabbage, sliced thin and rinsed
2 large Carrots, grated
1 Red pepper, halved and sliced thin
1 (3-inch) piece of fresh Ginger, grated
1/2 cup Rice vinegar
1 Tablespoon low sodium Soy sauce
1 Tablespoon Lemon juice
2 Tablespoons Olive oil
1/2 cup smooth Peanut butter
Crushed Red pepper
Directions:
1. In a large bowl, combine the Napa cabbage, carrots and red pepper. Stir to combine.
2. To the bowl of a food processor, add the ginger, vinegar, soy sauce, lemon juice, olive oil and peanut butter. Add a little crushed red pepper to taste (not too much!). Pulse until well mixed.
3. Pour the dressing over the cabbage mixture and toss well to combine.
4. Serve.

Great recipe! I added some bok choy to the Napa cabbage. I appreciate recipes that have no added sweetners.
