Greetings to each of you,

We’ve arrived at week 16, our final CSA share of the season. Thank you for your loyalty and support during this rather challenging year. I’m hoping you’ve enjoyed trying some new veggies and recipe ideas, as I’ve certainly enjoyed researching them with you. We’d love to welcome you back next year but until then, we wish you and your families a safe and healthy fall and winter.

Celery is making a repeat showing in our shares this week. As mentioned in a previous newsletter, please don’t be discouraged if it appears to be a little limp when you arrive home with it. Just plunge it in a bath of ice water, let it sit for awhile, and it will perk right up for you.

One other item making a final appearance is our leeks. I totally understand if you find these somewhat challenging to clean. Believe me, it took me some time to figure out how to do this! And I ate my share of grit until I learned. When cutting them, remember to use the white parts and tender light green parts only. Discard the tougher dark green end. Rinse the leek under running water. Cut it lengthwise, and then cut it crosswise, into half circles. Place these into a bowl of water, swishing the cut pieces around as the bowl is filling. Drain into a strainer. As you do, you’ll notice some sand. Repeat this a couple of times, until you don’t see any more sand or silt, just shiny green/white leeks. Now they’re ready for your recipes! The recipe titled “Roasted Butternut Squash and Leek Soup” is one to consider. For those of you who are receiving Von Hanson’s Pressed Bacon this week, you may want to cook a couple of pieces, crumble it, and add it as a garnish to finish off your soup.

Our second recipe this week, “Jalapeno Popper Stuffed Spaghetti Squash” would make a fun and healthy game day snack. Again, you can use some of your cooked and crumbled pressed bacon on the top. If you have any tomatoes or red bell pepper on hand, feel free to dice some up and toss in a handful, for additional color.
